Does anybody know target boat speeds and tack angle?

Dave,
That will surely depend on wiind strength, sea state and whether tide is running. Your best bet is to install a log and depth then go and play with your sails and boat.

A trim guide I have been reading by a sailmaker suggests I should know target boat speed to assess trim and rig optimization at different wind speeds. I assume this would be in a lake with no tide and minimal current. It sounded like this was fairly common.
I need the tack angle because I purchased a MicroCompass from Tack Tic, I believe its preset at 90 degrees. Instructions suggested I should change it for my boat. This sounded like it should be fairly common knowledge also.
